Chocolate Banana Cream Pie

This past Labor Day, the Buttercream Baker's reunited at Kentucky Lake.  If you haven't been there before, it is such an amazing and beautiful place to visit.  My family used to go every long, holiday weekend when Christy and I were little.  It is much harder now that we are older for all of us to get together.  
I have so many great memories of fishing, swimming, boating, and hanging out with our cousins. Our late grandfather, C.A., is the reason I love fishing.  You may occasionally hear me use the phrase "ding, ding, ding."  Every time I say it, I think about him and the lake. He would take my sister and me out fishing and when it was time to put out our line, he would yell "ding, ding, ding!" The lake hasn't been the same since he has been gone. I still expect to see him coming around the corner with a leaf blower or some kind of tool to work on the boats.  Papa was a hard worker, which kept him going.  He was one of the most determined individuals I've ever met.

While the BCB's were at the lake, of course we had to do our fair share of baking! My husband, as you may have read in previous posts, loves anything banana, so I made him a Chocolate Banana Cream Pie.  It was delicious and reminded me a lot of banana pudding.  This recipe was a little challenging just because it is hard to temper the custard with just 2 hands.  Thankfully, my mother and sister were there to help me out!! If the chocolate topping is too much or you aren't a fan of chocolate, I would recommend a little drizzle or just leave the chocolate off.  It was would be just as amazing without.  Also, a meringue or whipped cream topping would complement this pie nicely.

Banana Cream Pie

1 graham cracker pie crust
3 cups whole milk
3/4 cup white sugar
1/3 cup all-purpose flour
1/4 teaspoon salt
3 egg yolks, slightly beaten
2 tablespoons butter
1 teaspoon vanilla
2-3 bananas

1.  In a large saucepan, scald milk. 
2. In another bowl, combine the sugar, flour, and salt. Remove scalded milk from heat and gradually stir mixture into the scalded milk, stirring constantly.  
3.  Over medium heat, stirring constantly, cook until thickened.
4.  Cover and cook for 2 minutes longer, stirring occasionally.
5.  In a separate bowl, slightly beat 3 egg yolks.  Stir in a small amount of the hot mixture into beaten yolks.  When thoroughly combined, stir yolks back into hot mixture in large saucepan.
6.  Cook for one minute stirring constantly.
7.  Remove from heat and stir in butter and vanilla. Let mixture cool until lukewarm.
8.  Slice bananas and lay them in the pie shell.  Pour lukewarm mixture over bananas.  
9.  OPTIONAL: Top as desired. Temper chocolate chips and pour melted chocolate over pie or top with meringue or whipped cream.
