Hulless Caramel Corn

Last weekend a group of friends and I hit up the Nashville's Southern Ground Music and Food Festival. We got to see some amazing artists and also got to eat some tasty treats. One of my favorite treats I tried was Country Pop
Country Pop is a caramel coated hulless popcorn or corn puff. It was sooo good! It was sweet, and salty, and crunchy… and I instantly challenged myself to recreate this tasty treat. Plus I paid a hefty $6 bucks for a small bag and knew that I could make a huge batch for probably less than the small bag even cost… and I was right! My version, 'Christy Pop' exceeded my expectations! I really love the sweet and salty combination and this popcorn is hulless which gives it another advantage! You can eat as much as you want and wont need to floss when you are finished. lol 

WARNING: This sweet treat is dangerous because once you start eating it, you CAN'T stop! You could even take this Caramel corn to the next level by adding nuts, M&Ms, or chocolate chips…. or both or all three! :)



Ingredients:
1 bag of buttered puffed corn (I used Chester's)
12 large Marshmallows
1 stick of Butter
1 cup Brown Sugar
2 Tbsp Light Corn Syrup
1/2 Tsp Vanilla Extract

In a medium sauce pan, melt the butter over medium heat. 

Once butter is melted add brown sugar, corn syrup, vanilla, and marshmallows. Stir until marshmallows are melted and mixture is smooth.

 Pour the puff corn into a large bowl. Pour mixture over puff corn and stir thoroughly. Let cool on parchment paper. Store in air tight container or serve.
