This cookbook is great because it puts all these delicious recipes organized in one location. What a FUN giveaway product!!!! One of my favorite semi-homemade recipes is avocado hummus. I used canned cannellini beans instead of soaking and cooking dried beans. Using a food processor, I combine one can of beans with two avocados, a handful of fresh cilantro, juice of one lime, pinch of salt and a Tablespoon (or two) of olive oil. VIOLA! With pita chips or fresh veggies, it is AH-mazing. Yum! Yum!

I love it! My favorite semi-homemade recipe is box strawberry cake. Strawberry cake mix, tons of fresh strawberries and homemade cream cheese frosting. Follow cake mix directions, just add strawberries and a little extra cake flour. Cream Cheese frosting: blend together one package cream cheese, butter and powdered sugar until correct consistency. This is a great idea. I Love the Cream cheese delight bars. They are easy to make and pair well as a dessert or as part of a breakfast or brunch menu. I love the smell in my kitchen when they are baking.
My favorite "semi-homemade" recipe is Peanut Butter Blossom cookies. I use the Betty Crocker peanut butter cookie mix, but I add some extra flour, lower the temp, and cook them for longer...they turn out much more moist and stay fresh longer!!

I think you know. The Hunter family sugar cookies! Pillsbury slice and bake (extra large cut) with homeade icing (3 cups confectioner sugar, 1 stick butter, and approx. 1/3 cup milk + food coloring if you are feeling festive). Ice and let sit out overnight so icing sets. Cover the following morning until ready to serve.
