Low Cal Robert Redford Cake

If you are going to any Super Bowl parties, you know there will be tons of snacks and goodies.  As I have said before, I'm almost always dieting or watching what I eat.  What I learned at Weight Watchers (and Girl Scouts, lol)  is always be prepared.  You need to make a lower calorie item for you and your dieting friends.  I have made this recipe no telling how many times in the past.  I would count my points and use them to have a piece of this lower calorie version of Robert Redford Cake (and I do LOVE Robert Redford!!!)  I will make the original version of this cake and post it soon.  This piece of cake would sustain me so that I didn't binge on other high calorie candies and desserts.  I may have eaten more than my one portion but no ones perfect. lol  Of course the original version is better but to fulfill your sweet tooth and not blow your diet try this recipe!

1 cup crushed chex type cereal (I used Crispix), crushed
8 T light margarine (I used Smart Balance light)
1 pkg sugar free chocolate pudding
skim milk - use as directed on pudding pkg
1- 8 oz tub of light cream cheese (I used the light Philadelphia brand)
8 pkg equal
1 small tub of light or fat free cool whip

In a large plastic baggie or Ziploc, crush the chex type cereal with a rolling pin till you have 1 cup.  Mix the margarine and the cereal using a knife to cut the margarine into the cereal.  Press this into an 8 x 8 inch pan. You can use the bottom of a metal 1 cup measuring cup to press the cereal down.  Refrigerate this while you continue.   Make the pudding mix as directed and let set in the bowl you prepared it in while you mix the cream cheese with 1 cup of cool whip and equal.  Taking a spoon, drop small dollops of cream cheese mixture all over the top of the cereal layer.  Using a knife or spreading tool, spread this out very carefully.  Spread the pudding on top of the cream cheese layer.  Top it off with a cup or 2 of cool whip.  For a garnishment, you can sprinkle with pecans or mini chocolate chips.
